Creamy Garlic Herb Chicken Pasta

Herb chicken glazed in butter pairs with cheesy penne in creamy garlic sauce for a cozy, flavorful meal.

  • 450 g boneless skinless chicken thighs or chicken breast pieces
  • 15 ml olive oil
  • 30 g unsalted butter
  • 5 g paprika
  • 5 g garlic powder
  • 5 g onion powder
  • 5 g Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: crushed red pepper, to taste
  • 280 g cooked penne pasta
  • 15 g unsalted butter
  • 2 garlic cloves, finely minced
  • 240 ml heavy cream or half and half
  • 100 g shredded mature cheddar or cheese blend
  • 25 g grated parmesan cheese
  • 2.5 g Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika

Instructions

  1. Pat chicken dry and season thoroughly on all sides with paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Arrange the chicken in a single layer and sear for 4–5 minutes per side until deeply golden and cooked through.
  3. Add butter to the pan and, as it melts, spoon the hot herb butter repeatedly over the chicken to glaze and enrich the flavour. Transfer chicken to a plate and keep warm.
  4. In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Pour in cream, Italian seasoning, salt, and pepper. Allow to simmer gently.
  5. Stir in shredded cheddar and parmesan until melted and silky smooth, adjusting seasoning as needed.
  6. Add the cooked penne to the skillet and toss until pasta is thoroughly coated in the creamy cheese sauce.
  7. Arrange cheesy penne on plates beside the herb-glazed chicken. Drizzle any reserved pan juices over the chicken before serving.

Notes

Allow the chicken to rest a few minutes before slicing for juicier results.
Reserve a splash of pasta cooking water to adjust the sauce’s consistency if needed.
