  • 1 cup creamy peanut butter
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup milk

Instructions

1. Prepare the Crust:

  1. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Gently fold in the creamy peanut butter until fully combined.
  3. Slice the éclair shells in half horizontally and fill with the peanut butter cream mixture.
  4. In a microwave-safe bowl, melt the chocolate chips with milk, stirring every 30 seconds until smooth.
  5. Drizzle the melted chocolate over the filled éclairs.
  6. Refrigerate for at least 30 minutes before serving.
