Instructions
1. Prepare the Crust:
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold in the creamy peanut butter until fully combined.
- Slice the éclair shells in half horizontally and fill with the peanut butter cream mixture.
- In a microwave-safe bowl, melt the chocolate chips with milk, stirring every 30 seconds until smooth.
- Drizzle the melted chocolate over the filled éclairs.
- Refrigerate for at least 30 minutes before serving.
