For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 (20 oz) package cheese tortellini
  • 1 (16 oz) block Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add cubed chicken and cook until no longer pink, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add minced garlic and sauté for 1 minute until fragrant.
  3. Pour in chicken broth and heavy cream, then stir in Italian seasoning, salt, and pepper. Bring to a simmer.
  4. Add tortellini and cook for 5 minutes, stirring occasionally.
  5. Reduce heat to low and stir in Velveeta and mozzarella until fully melted and smooth.
  6. Return cooked chicken to the pot and stir to combine. Simmer for 2-3 minutes until heated through.
  7. Garnish with fresh parsley and serve immediately.

Notes

You can customize the seasonings to taste.
