A rich and creamy one-pot dinner featuring tender chicken, cheese tortellini, and a velvety Velveeta and mozzarella garlic sauce.

For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 (20 oz) package cheese tortellini
- 1 (16 oz) block Velveeta cheese, cubed
- 1 cup shredded mozzarella cheese
- 2 cups chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add cubed chicken and cook until no longer pink, about 5-7 minutes. Remove and set aside.
- In the same pot, add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, then stir in Italian seasoning, salt, and pepper. Bring to a simmer.
- Add tortellini and cook for 5 minutes, stirring occasionally.
- Reduce heat to low and stir in Velveeta and mozzarella until fully melted and smooth.
- Return cooked chicken to the pot and stir to combine. Simmer for 2-3 minutes until heated through.
- Garnish with fresh parsley and serve immediately.
