Crock Pot Beef Stew

This delicious beef stew is loaded with potatoes and carrots and slow cooked all day!

For the Crust:

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups beef broth
  • 4 medium potatoes, peeled and cubed
  • 4 medium carrots, sliced
  • 1 medium onion, chopped
  • 2 stalks celery, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine flour, salt, and pepper. Add beef cubes and toss to coat.
  2. Place the coated beef cubes in the bottom of a 6-quart slow cooker.
  3. Add the potatoes, carrots, onion, celery, and garlic to the slow cooker.
  4. In a medium bowl, whisk together the beef broth, paprika, and Worcestershire sauce. Pour over the ingredients in the slow cooker.
  5. Add the bay leaf to the slow cooker.
  6. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
  7. Remove the bay leaf before serving.

Notes

For a thicker stew, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir into the stew during the last 30 minutes of cooking.
