For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup blueberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
- In another bowl, mix cream cheese and powdered sugar until smooth.
- Drop spoonfuls of cookie dough onto baking sheets. Make a small well in each cookie and fill with a teaspoon of cream cheese mixture and a dollop of blueberry jam. Swirl gently with a toothpick.
- Bake for 12-15 minutes or until edges are lightly golden. Cool on wire racks before serving.
