Easy Coconut Cream Pie

A simple and delicious coconut cream pie with a flaky crust, creamy coconut filling, and fluffy whipped cream topping.

For the Crust:

  • 1 (9-inch) pre-baked pie crust
  • 1 cup sweetened shredded coconut
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1 cup coconut milk
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Toasted coconut flakes for garnish

Instructions

1. Prepare the Crust:

  1. Prepare pie crust according to package directions and let cool completely.
  2. In a medium bowl, whisk together pudding mix, milk, and coconut milk until thick and smooth.
  3. Fold in shredded coconut, then pour filling into cooled pie crust and smooth the top.
  4. In another bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  5. Spread whipped cream over pie filling and garnish with toasted coconut flakes.
  6. Refrigerate for at least 4 hours or until set before serving.
