Easy Garlic Shrimp Pasta: Quick Weeknight Delight

  • 1lb shrimp, large, peeled and deveined
  • 8 ozspaghetti or linguine
  • 6cloves garlic, minced
  • 3 tbspbutter
  • 2 tbspolive oil
  • 1/2 tspcrushed red pepper flakes (adjust to taste)
  • 1lemon, zested and juiced
  • 1/4 cupfresh parsley, chopped
  • Salt and pepper, to taste
  • 1/4 cupgrated Parmesan cheese (optional)
  • 1 cupreserved pasta water (as needed)

Instructions

  1. To get started, first pat the shrimp dry using paper towels. Season the shrimp generously with salt and freshly ground black pepper.
  2. In a large pot, bring salted water to a rolling boil, and add the spaghetti or linguine. Cook according to the package instructions until the pasta is al dente.
  3. While the pasta cooks, heat a large skillet over medium heat and add the olive oil and butter. Once melted, toss in the minced garlic and sauté for about 30 seconds to 1 minute.
  4. Add the seasoned shrimp in a single layer to the skillet. Cook for about 1.5 to 2 minutes on each side until pink and opaque. Remove from skillet.
  5. In the same skillet, pour in the lemon juice and zest, followed by the red pepper flakes. Simmer for about 1 minute.
  6. Add the drained pasta to the skillet, tossing it in the lemon-garlic sauce, adding reserved pasta water if needed.
  7. Add the cooked shrimp back to the skillet, tossing gently to reheat and combine. Adjust seasoning as desired.
  8. Garnish with freshly chopped parsley and a sprinkle of Parmesan cheese, if using, and serve immediately!

Notes

Using fresh shrimp makes a big difference in flavor; always check for freshness before cooking.
