Ingredients

Scale
  • 3ripe bananas, mashed
  • ½ cup(113 g) unsalted butter, softened
  • ¾ cup(150 g) granulated sugar
  • 1large egg
  • 1 tspvanilla extract
  • 1 ½ cups(190 g) all-purpose flour
  • 1 tspbaking soda
  • ½ tspsalt
  • 1 tspground cinnamon
  • 2 tbspgranulated sugar
  • 1 tspground cinnamon

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to ensure easy removal.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This step helps create a tender crumb texture in the bread.
  3. Add the egg, vanilla extract, and mashed bananas to the butter mixture. Stir well to combine all the ingredients.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing, as it can lead to a dense loaf.
  5. In a small bowl, mix the sugar and cinnamon for the topping. Pour the batter into the prepared loaf pan and sprinkle the snickerdoodle topping generously over the top.
  6. Place the loaf pan in the oven and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use overripe bananas: The riper the bananas, the sweeter and more flavorful your bread will be.
Do not overmix: Stir just until the dry ingredients are incorporated to keep the bread light and fluffy.
Check for doneness: Use a toothpick to ensure the bread is fully cooked without being overbaked.
