For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 2 tbsp all-purpose flour
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of the pan.
- In a bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla and flour.
- Divide the batter in half. Stir lemon juice and zest into one half.
- Drop spoonfuls of both batters onto the crust. Swirl gently with a knife.
- Bake for 25-30 minutes until set. Cool completely before cutting into bars.
