Flourless Apple Cinnamon Cottage Cheese Loaf

A cozy, sweet, and protein-packed loaf made with apples, cinnamon, and cottage cheese for a healthy twist.

  • 2 cups low-fat cottage cheese
  • 2 medium apples, peeled and diced
  • 1 tablespoon ground cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Optional: 1/2 cup chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a blender, combine cottage cheese, diced apples, cinnamon, rolled oats, honey, vanilla extract, and baking powder. Blend until smooth.
  3. Pour the batter into the prepared loaf pan and smooth the top.
  4. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. Slice and serve warm or at room temperature.

Notes

This loaf is naturally gluten-free and high in protein. Store in an airtight container for up to 3 days.
