Flourless Cottage Cheese Apple Cake

A cozy, high-protein, gluten-free cake made with cottage cheese and apples for a healthy twist on a classic dessert.

  • 1 cup cottage cheese
  • 2 large apples, peeled and sliced
  • 4 eggs
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 cup almond flour

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a blender, combine cottage cheese, eggs, honey, and vanilla extract until smooth.
  3. Fold in sliced apples, cinnamon, and almond flour.
  4. Pour batter into a greased cake pan.
  5. Bake for 40-45 minutes or until golden and set.
  6. Let cool before serving.

Notes

This cake is best served chilled and can be stored in the fridge for up to 3 days. Add nuts for extra crunch.
