For the Crust:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 cup fresh blueberries
  • 1 tablespoon milk for brushing
  • 1 tablespoon coarse sugar for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gently stir in buttermilk until just combined. Fold in blueberries carefully to avoid crushing.
  4. Turn dough onto a floured surface, knead lightly 2-3 times, and pat into a 1-inch thick circle. Cut into rounds with a biscuit cutter.
  5. Place biscuits on prepared sheet, brush tops with milk, and sprinkle with coarse sugar. Bake for 12-15 minutes until golden.
