For the Crust:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold buttermilk
- 1 cup fresh blueberries
- 1 tablespoon milk for brushing
- 1 tablespoon coarse sugar for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Gently stir in buttermilk until just combined. Fold in blueberries carefully to avoid crushing.
- Turn dough onto a floured surface, knead lightly 2-3 times, and pat into a 1-inch thick circle. Cut into rounds with a biscuit cutter.
- Place biscuits on prepared sheet, brush tops with milk, and sprinkle with coarse sugar. Bake for 12-15 minutes until golden.
