This Fluffy Cottage Cheese Cloud Bread is a low-carb, high-protein, gluten-free alternative to traditional bread. Light and airy, it’s ideal for sandwiches, mini pizzas, or enjoying on its own.

  • 3large eggs, separated
  • ½ cupcottage cheese (blended until smooth)
  • ¼ teaspooncream of tartar
  • ½ teaspoonsalt
  • 1 tablespooncornstarch or arrowroot powder (optional)
  • 1 teaspoonhoney or a pinch of sweetener (optional)

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate egg whites and yolks into two bowls.
  3. Add cream of tartar to egg whites and beat until stiff peaks form.
  4. In the yolk bowl, mix blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using) until smooth.
  5. Gently fold the whipped egg whites into the yolk mixture in three additions using a spatula.
  6. Scoop mixture onto baking sheet to form 6–8 rounds and shape evenly.
  7. Bake for 25–30 minutes until tops are golden brown and set.
  8. Let cool completely before serving.

Notes

Use room-temperature eggs for better volume when whipping.
Do not overfold—stop as soon as ingredients are just combined.
Bake immediately after mixing to prevent deflation.
