These fluffy cottage cheese biscuits are light, soft, and so satisfying – all while being keto-friendly! They require just 3 ingredients and are ready in 20 minutes.

Ingredients

  • 2 cups cottage cheese
  • 2 cups almond flour
  • 2 large eggs

Instructions

  1. Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper and set aside.
  2. In a high-speed blender or food processor, add your cottage cheese and blend until smooth and creamy.
  3. Transfer the mixture into a large mixing bowl. Add your almond flour and eggs and mix until combined. Fold the mixture together until a thick batter remains.
  4. Using a spoon or cookie scoop, add 1 1/2-tbsp portions of the biscuit batter onto the lined tray. Flatten slightly.
  5. Bake the biscuits for 18-20 minutes, or until the edges are golden brown.
  6. Remove from the oven and allow to cool on the baking sheet for 10 minutes, before transferring to a wire rack to cool completely.

Notes

Store in the fridge for up to 5 days. For best results, reheat in toaster before serving.
