Crispy, tangy fried green tomatoes make a delicious Southern appetizer or side dish.

For the Crust:
- 4 medium green tomatoes
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2 large eggs
- 1/4 cup buttermilk
- 1 cup cornmeal
- 1/2 cup vegetable oil for frying
Instructions
1. Prepare the Crust:
- Slice tomatoes into 1/4-inch thick rounds and set aside.
- In a shallow bowl, mix flour, salt, pepper, garlic powder, and paprika.
- In another bowl, whisk eggs and buttermilk together.
- Place cornmeal in a third shallow bowl.
- Dredge tomato slices in flour mixture, dip in egg mixture, then coat with cornmeal.
- Heat oil in a large skillet over medium heat. Fry tomatoes in batches for 2-3 minutes per side until golden brown.
- Drain on paper towels and serve warm.
