Fried Pineapple with Coconut Crust

A tropical twist on fried fruit, featuring juicy pineapple slices coated in a crispy coconut crust.

For the Crust:

  • 1 fresh pineapple, peeled and sliced into rings
  • 1 cup shredded coconut
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a shallow bowl, mix flour, salt, and cinnamon. In another bowl, combine shredded coconut and panko breadcrumbs.
  2. Dip each pineapple ring first in the flour mixture, then in the beaten eggs, and finally coat with the coconut-breadcrumb mixture.
  3. Heat oil in a skillet over medium heat. Fry pineapple rings for 2-3 minutes per side until golden brown. Drain on paper towels before serving.

Notes

You can customize the seasonings to taste.
