A tropical twist on fried fruit, featuring juicy pineapple slices coated in a crispy coconut crust.

For the Crust:
- 1 fresh pineapple, peeled and sliced into rings
- 1 cup shredded coconut
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a shallow bowl, mix flour, salt, and cinnamon. In another bowl, combine shredded coconut and panko breadcrumbs.
- Dip each pineapple ring first in the flour mixture, then in the beaten eggs, and finally coat with the coconut-breadcrumb mixture.
- Heat oil in a skillet over medium heat. Fry pineapple rings for 2-3 minutes per side until golden brown. Drain on paper towels before serving.
