For the Crust:
1 fresh pineapple, peeled and cored, cut into 1/2-inch rings
1/4 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup granulated sugar
2 tablespoons unsalted butter
2 tablespoons vegetable oil
Powdered sugar for dusting (optional)
Instructions
1. Prepare the Crust:
In a shallow dish, mix flour, cornstarch, cinnamon, and salt. Dredge each pineapple ring in the mixture, shaking off excess.
Heat butter and oil in a large skillet over medium heat. Arrange pineapple rings in a single layer and cook for 3-4 minutes per side until golden brown.
Sprinkle granulated sugar evenly over the pineapple rings. Cook for another 1-2 minutes per side until sugar caramelizes.
Transfer to a plate, let cool slightly, and dust with powdered sugar if desired. Serve warm.
