Golden Baked Brie with Caramelized Apples & Thyme

A warm, gooey wheel of brie cheese is baked to golden perfection and topped with sweet caramelized apples and fragrant fresh thyme. This elegant appetizer is perfect for fall gatherings or holiday parties, blending creamy cheese with the subtle earthy notes of thyme.

  • 1 (8-10 ounce) wheel of brie cheese
  • 2 medium apples (such as Honeycrisp or Granny Smith), cored and thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 1 tablespoon brown sugar
  • Pinch of salt
  • Crackers or sliced baguette, for serving

Instructions

  1. Preheat the oven to 375°F (190°C). Place the wheel of brie on a baking sheet lined with parchment paper or in a small oven-safe dish.
  2. In a skillet over medium heat, melt the butter. Add the sliced apples, brown sugar, and a pinch of salt. Cook, stirring occasionally, for 5-7 minutes until the apples are softened and caramelized.
  3. Stir in the fresh thyme leaves and remove from heat.
  4. Spoon the caramelized apples over the top of the brie wheel, spreading them evenly.
  5. Bake the brie for 15-20 minutes, or until the cheese is soft and the top is golden and bubbly. The crust should be slightly cracked.
  6. Remove from the oven and garnish with additional fresh thyme if desired. Serve immediately with crackers or sliced baguette.

Notes

For best results, use a good-quality brie with a bloomy rind. If the brie is too firm to spread, let the apples bake on top to soften it naturally. This appetizer can be assembled ahead and baked just before serving.
