Gooey Cinnamon Cream Cheese Muffins

Soft, tender muffins with a sweet cream cheese swirl and a cinnamon sugar topping that bakes into a gooey, irresistible treat.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp melted butter for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt. In another bowl, mix milk, melted butter, egg, and 1 tsp vanilla. Combine wet and dry ingredients until just mixed.
  3. In a separate bowl, beat softened cream cheese with 1/4 cup sugar and 1 tsp vanilla until smooth.
  4. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter. In a small bowl, mix brown sugar and cinnamon. Brush muffin tops with melted butter and sprinkle generously with cinnamon sugar.
  5. Bake for 20-25 minutes until tops are golden and a toothpick comes out clean. Cool for 10 minutes before serving.

Notes

You can customize the seasonings to taste.
