These cinnamon roll cookies are like biting into a soft, gooey cinnamon roll but in cookie form! They’re perfect for cozy days with a warm drink.

  • For the Dough:
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • For the Cinnamon Filling:
  • 3 tablespoons butter, melted
  • 1/4 cup white sugar
  • 2 tablespoons ground cinnamon
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F.
  2. In a small bowl, mix the filling ingredients together and set aside.
  3. In another bowl, combine dry ingredients: flour, baking soda, baking powder.
  4. In a large bowl, cream butter and sugar together until light and fluffy, about 2 minutes.
  5. Add egg and vanilla, mix well.
  6. Gradually blend the flour mixture into creamed mixture.
  7. Roll dough into a 12×8 inch rectangle about 1/4 inch thick.
  8. Spread cinnamon filling evenly over the dough.
  9. Roll up the dough tightly, starting from the long edge.
  10. Cut into 1-inch slices and place on ungreased cookie sheets.
  11. Bake for 8-10 minutes, or until cookies are golden brown.
  12. Cool completely and drizzle with glaze.

Notes

Store in an airtight container for up to 5 days. Freezes well for up to 3 months.
