Gooey Reese’s Cheesecake Cookies

Soft, chewy cookies with a creamy cheesecake center and chunks of Reese’s peanut butter cups throughout.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup Reese’s peanut butter cups, chopped
  • 1/2 cup semi-sweet chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, beat cream cheese and powdered sugar until smooth. Set aside.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing until just combined.
  5. Fold in chopped Reese’s cups and chocolate chips.
  6. Drop tablespoon-sized balls of dough onto prepared sheets. Make an indentation in the center of each and fill with about 1 teaspoon of cream cheese mixture. Cover with another tablespoon of cookie dough, sealing edges.
  7. Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheet for 5 minutes before transferring to wire rack.
