Soft, chewy cookies with a creamy cheesecake center and chunks of Reese’s peanut butter cups throughout.

For the Crust:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
8 oz cream cheese, softened
1/4 cup powdered sugar
1 cup Reese’s peanut butter cups, chopped
1/2 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a medium bowl, beat cream cheese and powdered sugar until smooth. Set aside.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing until just combined.
Fold in chopped Reese’s cups and chocolate chips.
Drop tablespoon-sized balls of dough onto prepared sheets. Make an indentation in the center of each and fill with about 1 teaspoon of cream cheese mixture. Cover with another tablespoon of cookie dough, sealing edges.
Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheet for 5 minutes before transferring to wire rack.
