Halloween Shredded Chicken & Rice Stuffed Peppers

Spooky and fun Halloween recipe featuring bell peppers stuffed with shredded chicken, rice, and veggies – perfect for a festive dinner!

  • 4 large bell peppers (orange or red for Halloween theme)
  • 1 cup cooked shredded chicken
  • 1 cup cooked rice
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers (mix colors)
  • 1 cup tomato sauce
  • 1/2 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove seeds.
  3. In a large bowl, combine shredded chicken, cooked rice, chopped onions, chopped bell peppers, tomato sauce, garlic powder, paprika, salt, and pepper. Mix well.
  4. Stuff each bell pepper with the mixture and place in a baking dish.
  5. Drizzle olive oil over the peppers and bake for 25-30 minutes.
  6. Top with shredded cheese and bake for an additional 5 minutes until cheese is melted.
  7. Serve hot and enjoy the Halloween vibes!

Notes

Add black olives or use food coloring for extra spooky effects. Ensure peppers stand upright on a lined sheet for best results.
