This healthy chicken bowl features grilled chicken, creamy guacamole, and a variety of fresh veggies for a nutritious and flavorful meal.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 avocados
  • 1 lime, juiced
  • 1 garlic clove, minced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 cup mixed greens
  • 1/4 red onion, thinly sliced

Instructions

  1. Season the chicken breasts with salt, pepper, and olive oil.
  2. Grill the chicken for 6-7 minutes per side or until cooked through. Let rest, then slice.
  3. Mash the avocados with lime juice, garlic, salt, and pepper to make guacamole.
  4. Assemble the bowl: Place mixed greens in bowls, top with sliced chicken, guacamole, cherry tomatoes, cucumber, and red onion.

Notes

For extra flavor, add a sprinkle of cilantro on top. Adjust seasoning to taste.
