For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups fresh strawberries, diced
- 1/4 cup strawberry jam
- 1 cup whipped cream
- 1/2 tsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line an 8×8 baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the pan to form the crust.
- Bake crust for 10 minutes, then let cool.
- Beat cream cheese, sour cream, and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla.
- Pour cheesecake batter over crust. Bake for 30-35 minutes until set. Cool completely.
- Mix strawberries, jam, and lemon juice. Spread over cooled cheesecake layer.
- Top with whipped cream. Chill for at least 2 hours before serving.
