Heavenly Strawberry Shortcake Cheesecake Bars

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, diced
  • 1/4 cup strawberry jam
  • 1 cup whipped cream
  • 1/2 tsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line an 8×8 baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the pan to form the crust.
  3. Bake crust for 10 minutes, then let cool.
  4. Beat cream cheese, sour cream, and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla.
  5. Pour cheesecake batter over crust. Bake for 30-35 minutes until set. Cool completely.
  6. Mix strawberries, jam, and lemon juice. Spread over cooled cheesecake layer.
  7. Top with whipped cream. Chill for at least 2 hours before serving.

Notes

You can customize the seasonings to taste.
