For the Crust:
2 cups grated carrots
1 cup all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup vegetable oil
3/4 cup granulated sugar
2 large eggs
16 oz cream cheese, softened
1/2 cup sour cream
3/4 cup brown sugar
1 tsp vanilla extract
1/2 cup chopped walnuts
Instructions
1. Prepare the Crust:
Preheat oven to 350°F. Grease a 9-inch springform pan.
Mix flour, baking soda, cinnamon, and nutmeg. In another bowl, whisk oil, granulated sugar, and eggs. Combine wet and dry ingredients, then fold in carrots.
Beat cream cheese, sour cream, brown sugar, and vanilla until smooth.
Spread half of carrot cake batter in pan. Top with cheesecake mixture, then remaining cake batter. Sprinkle with walnuts.
Bake for 45-50 minutes until set. Cool completely before serving.
