Pollo Loco is a juicy, flavor-packed grilled chicken recipe marinated in citrus, garlic, and smoky spices, perfect for family dinners or backyard cookouts. Inspired by street-style Mexican cuisine, this easy homemade version delivers restaurant-quality taste from the comfort of your own kitchen.

  • 4boneless, skinless chicken thighs (or breasts)
  • 1/4 cupfresh lime juice
  • 1/4 cupfresh orange juice
  • 3 tablespoonsolive oil
  • 3cloves garlic, minced
  • 1 tablespoonsmoked paprika
  • 1 teaspoonground cumin
  • 1 teaspoonchili powder
  • 1/2 teaspoondried oregano
  • Salt and pepper to taste
  • Optional: chopped cilantro and lime wedges for garnish

Instructions

  1. In a bowl, whisk together lime juice, orange juice, olive oil, garlic, paprika, cumin, chili powder, oregano, salt, and pepper.
  2. Place the chicken in a resealable plastic bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 2 hours or overnight for best flavor.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and grill for 5–7 minutes per side, or until fully cooked and slightly charred.
  5. Let the chicken rest for a few minutes, then slice or serve whole.
  6. Garnish with fresh cilantro and lime wedges, if desired.

Notes

For more flavor, marinate the chicken overnight.
This recipe can also be cooked in a skillet or baked in the oven at 400°F for 25–30 minutes.
