Homemade Pumpkin Cake

A moist and flavorful pumpkin cake with warm spices, perfect for autumn gatherings.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree, oil, and eggs until well combined.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined. Fold in walnuts if using.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool completely before serving.
