Homemade Salmon Soup

A comforting and flavorful salmon soup with vegetables and herbs, perfect for a cozy meal.

For the Crust:

  • 1 lb fresh salmon fillet, skin removed and cubed
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried dill
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Add garlic and cook for another minute until fragrant. Pour in the broth and bring to a simmer.
  3. Add the cubed salmon, dried dill, salt, and pepper. Simmer for 10-12 minutes until salmon is cooked through.
  4. Stir in the heavy cream and heat through without boiling. Adjust seasoning if needed.
  5. Ladle into bowls, garnish with fresh parsley, and serve warm.
