Honey Cranberry Chicken Bake

Golden sourdough, chicken, cranberries, brie, and feta blend for a sweet-savory baked sensation.

  • 1 sourdough loaf, sliced into 2.5 cm pieces
  • 240 g cranberries, fresh or dried
  • 225 g brie cheese, cut into small cubes
  • 45 ml honey
  • 28 g unsalted butter, melted
  • 1 teaspoon fresh thyme, chopped (optional)
  • Pinch of salt

Instructions

  1. Set oven temperature to 175°C and lightly grease a suitable baking dish.
  2. With a sharp knife, cut the sourdough loaf into cubes, stopping short of the base to retain loaf structure.
  3. Carefully insert cubed brie cheese and cranberries between the bread pieces, ensuring even distribution and gentle packing.
  4. Position the filled loaf in the baking dish. Evenly drizzle melted butter and honey over the loaf, allowing the mixture to soak into the bread.
  5. Sprinkle fresh thyme and a pinch of salt across the top for aromatic flavor enhancement.
  6. Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes until golden and cheeses have melted through.
  7. Allow the bake to cool for 5 minutes before serving. Pull apart the slices to enjoy the harmonious blend of textures and flavors.

Notes

For added tang, substitute a portion of the cranberries with dried cherries or apricots.
