Honey Garlic Chicken with Rice & Broccoli

This easy honey garlic chicken with rice and broccoli is a delicious, one-pan meal that’s perfect for busy weeknights. Tender chicken coated in a sweet and tangy sauce served over fluffy rice and steamed broccoli.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then add to the skillet and cook until browned, about 5-7 minutes.
  3. Push chicken to one side and add garlic, cooking for 1 minute until fragrant.
  4. In a bowl, mix honey, soy sauce, and cornstarch, then pour into the skillet.
  5. Stir to coat chicken and simmer for 5 minutes until sauce thickens.
  6. Meanwhile, cook rice in chicken broth according to package instructions.
  7. Steam or microwave broccoli until tender.
  8. Serve chicken over rice with broccoli on the side.

Notes

For extra crispiness, you can fry the chicken in a little more oil. Omit soy sauce for a gluten-free version and use tamari instead.
