Honey-Glazed Acorn Squash with Creamy Goat Cheese & Cranberry Drizzle

This festive side dish features tender acorn squash glazed with honey, topped with creamy goat cheese and a tangy cranberry drizzle for a perfect holiday or autumn meal.

  • 2 medium acorn squashes (about 2 pounds total)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 ounces goat cheese, softened
  • 1/2 cup cranberry sauce
  • 2 tablespoons balsamic vinegar
  • Fresh herbs, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut each acorn squash in half lengthwise and scoop out the seeds.
  3. Brush the squash halves with olive oil and drizzle with honey. Season with salt and pepper.
  4. Place squash halves cut-side up on a baking sheet and bake for 30-40 minutes, or until tender.
  5. In a small saucepan, heat cranberry sauce and balsamic vinegar over medium heat until warmed through.
  6. Remove squash from oven and dollop goat cheese onto each half.
  7. Drizzle with the cranberry mixture and garnish with herbs if desired.
  8. Serve warm.

Notes

For a spicier kick, add a pinch of cayenne pepper to the glaze. Leftovers can be stored in the refrigerator for up to 2 days.
