For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1/2 cup honey
  • 2 jalapeños, sliced (seeds removed for less heat)
  • 1 cup fresh peaches, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  2. In the same skillet, add garlic and jalapeños. Sauté for 1-2 minutes until fragrant.
  3. Add honey, peaches, and lime juice to the skillet. Stir well and let simmer for 3-4 minutes until the sauce thickens slightly.
  4. Return chicken to the skillet, spooning the sauce over the top. Cook for another 2-3 minutes to let the flavors meld.
  5. Garnish with fresh cilantro and serve warm.
