For the Crust:
- 3 large eggs
- 1 cup granulated sugar
- 1/3 cup water
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 ripe bananas, mashed
- 1/2 cup caramel sauce
- 1 cup whipped cream
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
- In a large bowl, beat eggs and sugar until thick and pale. Mix in water and vanilla extract.
- Sift flour, baking powder, and salt together. Gradually fold into the egg mixture.
- Spread batter evenly into the prepared pan. Bake for 12-15 minutes until golden.
- Turn the cake onto a clean towel dusted with powdered sugar. Roll cake and towel together from the short side. Let cool.
- Unroll the cake and spread mashed bananas, caramel sauce, and whipped cream evenly over the surface.
- Re-roll the cake without the towel. Chill for at least 1 hour before serving.
- Dust with powdered sugar and drizzle with extra caramel before serving.
