Irresistible Banana Caramel Roll Cake

For the Crust:

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 ripe bananas, mashed
  • 1/2 cup caramel sauce
  • 1 cup whipped cream
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
  2. In a large bowl, beat eggs and sugar until thick and pale. Mix in water and vanilla extract.
  3. Sift flour, baking powder, and salt together. Gradually fold into the egg mixture.
  4. Spread batter evenly into the prepared pan. Bake for 12-15 minutes until golden.
  5. Turn the cake onto a clean towel dusted with powdered sugar. Roll cake and towel together from the short side. Let cool.
  6. Unroll the cake and spread mashed bananas, caramel sauce, and whipped cream evenly over the surface.
  7. Re-roll the cake without the towel. Chill for at least 1 hour before serving.
  8. Dust with powdered sugar and drizzle with extra caramel before serving.

Notes

You can customize the seasonings to taste.
