A moist and refreshing lemon poppy seed loaf packed with protein for a sweet treat that’s perfect for breakfast or snack time.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup protein powder (vanilla flavored)
  • 1/4 cup poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • Zest and juice of 2 lemons
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, protein powder, poppy seeds, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, beating well.
  4. Stir in yogurt, lemon zest, lemon juice, and vanilla.
  5. Gradually add dry ingredients to wet, alternating with milk, until just combined.
  6. Pour batter into prepared pan and bake for 45-50 minutes or until toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to wire rack.

Notes

Store in an airtight container for up to 3 days. For extra moisture, serve warm with a lemon glaze.
