This soft and fresh sugar-free loaf combines the tanginess of lemon and poppy seeds with cottage cheese for a moist, protein-packed treat.

  • 2 cups cottage cheese
  • 1 cup almond flour
  • 1/2 cup lemon juice
  • Zest of 2 lemons
  • 2 tablespoons poppy seeds
  • 3 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a loaf pan with parchment paper.
  2. In a large bowl, mix the cottage cheese, eggs, lemon juice, zest, and vanilla extract until smooth.
  3. Gradually add the almond flour, baking powder, salt, and poppy seeds, stirring until just combined.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Slice and enjoy!

Notes

This loaf is best stored in an airtight container in the fridge for up to 4 days. For a sweetener, you could add stevia if desired, but it’s delicious as is!
