Lemon Raspberry Madeleines

Delicate French butter cakes infused with lemon zest and studded with fresh raspberries.

For the Crust:

  • 1/2 cup unsalted butter, melted and cooled
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh raspberries, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease and flour madeleine pan.
  2. Whisk together melted butter, sugar, eggs, vanilla, and lemon zest until smooth.
  3. In separate bowl, mix flour, baking powder, and salt. Gradually fold into wet ingredients.
  4. Gently fold in chopped raspberries. Spoon batter into madeleine molds.
  5. Bake for 10-12 minutes until edges are golden. Cool in pan for 2 minutes before transferring.

Notes

You can customize the seasonings to taste.
