For the Crust:
- 1/2 cup unsalted butter, melted and cooled
- 2/3 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup fresh raspberries, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease and flour madeleine pan.
- Whisk together melted butter, sugar, eggs, vanilla, and lemon zest until smooth.
- In separate bowl, mix flour, baking powder, and salt. Gradually fold into wet ingredients.
- Gently fold in chopped raspberries. Spoon batter into madeleine molds.
- Bake for 10-12 minutes until edges are golden. Cool in pan for 2 minutes before transferring.
