For the Crust:

  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • Butter and sugar for ramekins

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Butter and sugar four ramekins.
  2. In a bowl, whisk together egg yolks, 1/4 cup sugar, lemon juice, lemon zest, flour, and vanilla until smooth.
  3. In a separate bowl, beat egg whites and salt until soft peaks form. Gradually add remaining 1/4 cup sugar and beat until stiff peaks form.
  4. Gently fold the egg yolk mixture into the beaten egg whites until just combined.
  5. Divide the mixture evenly among the prepared ramekins. Smooth the tops with a spatula.
  6. Bake for 12-15 minutes until puffed and golden. Serve immediately.
