Lobster Croissant Rolls are a luxurious yet easy appetizer made with buttery croissants filled with creamy lobster salad, flavored with lemon zest, celery, and tarragon. Perfect for brunches, parties, or elegant dinners.

  • 3 2/3 cupslobster meat, cooked and chopped (about 1 lb7 oz)
  • 1/3 cupmayonnaise (about3 oz)
  • 1/4 cupcelery, small diced (about2 oz)
  • 1 Tbsptarragon, finely chopped
  • 1 Tbsplemon zest
  • 24mini croissants (Pillsbury™ Freezer-to-Oven Croissant Dough,1.25 ozeach)
  • Fresh chives, finely chopped (for garnish, optional)

Instructions

  1. Bake croissants according to package instructions and let them cool completely.
  2. In a bowl, combine lobster meat and mayonnaise. Stir gently to coat.
  3. Add celery, tarragon, and lemon zest to the mix. Stir gently to preserve the lobster chunks. Chill until ready to use.
  4. Slice each croissant from the top down about three-quarters through, creating a pocket.
  5. Fill each croissant with about 1 ounce of the lobster mixture.
  6. Garnish with chopped chives and serve two sliders per portion.

Notes

Lobster mixture can be made up to 24 hours in advance.
Use gluten-free croissants or lettuce wraps for dietary alternatives.
Don’t assemble rolls until just before serving to maintain croissant texture.
Add a dash of hot sauce for a spicy twist.
