Luscious Lemon Cream Cheese Muffins

Soft, tender muffins with a bright lemon flavor and a rich cream cheese swirl, topped with a sweet lemon glaze.

For the Crust:

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp lemon juice (for glaze)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix milk, melted butter, eggs, lemon zest, and lemon juice. Combine wet and dry ingredients until just mixed.
  3. In a small bowl, beat cream cheese and 1/4 cup powdered sugar until smooth. Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with remaining batter.
  4. Bake for 18-20 minutes until golden and a toothpick comes out clean. Cool completely.
  5. Whisk 1 cup powdered sugar and 2 tbsp lemon juice for glaze. Drizzle over cooled muffins.
