Marry Me Chicken Thighs

Juicy chicken thighs with a creamy sun-dried tomato and Parmesan sauce, best served with your favorite side.

  • 900 grams bone-in, skin-on chicken thighs
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Onion powder, to taste
  • Garlic powder, to taste
  • 60 grams onion, finely chopped
  • 5 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 teaspoon dried basil
  • 60 millilitres dry white wine
  • 180 millilitres chicken stock
  • 120 millilitres heavy cream
  • 60 grams sun-dried tomatoes, finely minced
  • 60 grams Parmesan cheese, freshly grated
  • Fresh parsley, chopped, to garnish

Instructions

  1. Set oven temperature to 190°C.
  2. Pat chicken thighs dry and season on both sides with salt, black pepper, onion powder, and garlic powder.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs, skin-side down first, for approximately 4 minutes per side until golden brown. Remove chicken from the pan and set aside.
  4. Remove all but 2 tablespoons of rendered oil from the skillet. Reduce heat to medium and add chopped onion, thyme, oregano, red pepper flakes, and basil. Cook for 3 minutes, stirring occasionally.
  5. Stir in minced garlic and cook for 1 minute until aromatic.
  6. Pour in white wine and allow to reduce slightly, scraping any browned bits from the pan. Add chicken stock, heavy cream, sun-dried tomatoes, and Parmesan cheese. Stir to combine and bring to a simmer.
  7. Nestle seared chicken thighs into the sauce, skin side up. Transfer skillet to preheated oven and bake for 20 to 25 minutes, or until the chicken is fully cooked and a meat thermometer inserted into the thickest part reads at least 74°C.
  8. Remove skillet from the oven. Rest chicken for several minutes, garnish with chopped parsley, and serve hot accompanied by your preferred side.

Notes

For best results, allow the sauce to reduce until thickened before serving; ideal served with mashed potatoes, rice, noodles, or mashed cauliflower.
