Mediterranean Spinach Grilled Cheese

Golden grilled sandwich layered with spinach, feta, mozzarella, sun-dried tomatoes, and olives.

  • 4 slices hearty bread such as sourdough, multigrain or ciabatta
  • 2 tablespoons olive oil or butter
  • 1 cup fresh spinach leaves
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, sliced
  • 1 teaspoon dried oregano

Instructions

  1. Place a skillet over medium heat and allow it to come to temperature.
  2. Brush one side of each bread slice evenly with olive oil or softened butter.
  3. On the uncoated side of two bread slices, layer fresh spinach leaves, crumbled feta, mozzarella, chopped sun-dried tomatoes, sliced Kalamata olives, and a sprinkling of dried oregano.
  4. Top each assembled slice with a second piece of bread, keeping the oiled or buttered side facing outward.
  5. Transfer sandwiches to the hot skillet and cook for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
  6. Remove from skillet, slice each sandwich in half, and serve immediately while warm.

Notes

For enhanced flavor, use high-quality Mediterranean bread and thoroughly drain olives before slicing.
