Mexican Macaroni Salad

A zesty and colorful pasta salad with Mexican-inspired flavors, perfect for picnics or potlucks.

For the Crust:

  • 2 cups elbow macaroni, cooked and cooled
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the cooked macaroni, black beans, corn, red bell pepper, red onion, and cilantro.
  2. In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and black pepper.
  3. Pour the dressing over the macaroni mixture and toss gently until everything is well coated.
  4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  5. Stir well before serving and garnish with additional cilantro if desired.

Notes

You can customize the seasonings to taste.
