Mexican Shrimp Cocktail with Avocado

A refreshing and zesty Mexican-style shrimp cocktail with creamy avocado, perfect for a light appetizer or main dish.

For the Crust:

  • 1 lb cooked shrimp, peeled and deveined
  • 1 large avocado, diced
  • 1 cup tomato juice
  • 1/2 cup ketchup
  • 1/4 cup fresh lime juice
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp hot sauce (optional)
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce (if using). Mix well.
  2. Add shrimp, avocado, cucumber, red onion, jalapeño, and cilantro to the bowl. Gently toss to coat with the sauce.
  3. Season with salt and pepper to taste. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  4. Serve chilled in glasses or bowls, garnished with additional cilantro if desired.

Notes

You can customize the seasonings to taste.
