For the Crust:
- 1 lb cooked shrimp, peeled and deveined
- 1 large avocado, diced
- 1 cup tomato juice
- 1/2 cup ketchup
- 1/4 cup fresh lime juice
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 tsp hot sauce (optional)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce (if using). Mix well.
- Add shrimp, avocado, cucumber, red onion, jalapeño, and cilantro to the bowl. Gently toss to coat with the sauce.
- Season with salt and pepper to taste. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled in glasses or bowls, garnished with additional cilantro if desired.
