Mexican White Trash Casserole is a rich, cheesy, and comforting layered bake featuring crushed Doritos, creamy chicken filling, and melted cheese. It’s a quick, crowd-pleasing dinner option also known as the Layered Cheesy Chicken Dorito Bake.

  • 1bag Nacho Doritos, crushed
  • 2 cupsshredded chicken (cooked; rotisserie chicken recommended)
  • 2 cupsshredded cheese (Cheddar, Monterey Jack, or Mexican blend)
  • 1can cream of chicken soup
  • 1can Ro’tel tomatoes with diced green chilies
  • ½ cupsour cream
  • ½ cupmilk
  • ½package taco seasoning

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 2-quart casserole dish.
  2. In a large bowl, mix shredded chicken, cream of chicken soup, Ro’tel tomatoes, sour cream, milk, and taco seasoning until well combined.
  3. Layer half the crushed Doritos in the bottom of the casserole dish.
  4. Spoon half the chicken mixture over the Doritos layer.
  5. Repeat layers with remaining Doritos and chicken mixture.
  6. Top with shredded cheese.
  7. Cover with aluminum foil and bake for 35 minutes. Remove foil during the last 10 minutes to allow cheese to melt and top to crisp.
  8. Let rest for a few minutes before serving. Garnish with extra crushed Doritos, chopped green onions, or sour cream as desired.

Notes

For crunchier texture, avoid crushing Doritos too finely—aim for medium-sized pieces.
Use rotisserie chicken or pre-cooked shredded chicken to save time.
Adjust spice level with mild, medium, or hot Ro’tel tomatoes.
Shred cheese at home for best melt quality—pre-shredded cheese may contain starches that affect texture.
