Mini Cherry Peanut Butter Cheesecakes

Delicious bite-sized cheesecakes with a peanut butter twist, topped with cherry compote.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup cherry pie filling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs with melted butter. Press 1 tbsp of mixture into each liner to form the crust.
  3. Beat cream cheese, peanut butter, sugar, and vanilla until smooth. Add egg and mix until just combined.
  4. Divide filling evenly among crusts. Bake for 20-25 minutes until set.
  5. Cool completely, then top each cheesecake with cherry pie filling. Chill for at least 1 hour before serving.

Notes

You can customize the seasonings to taste.
