Delicious bite-sized cheesecakes with a peanut butter twist, topped with cherry compote.

For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 8 oz cream cheese, softened
- 1/2 cup creamy peanut butter
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup cherry pie filling
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with paper liners.
- Mix graham cracker crumbs with melted butter. Press 1 tbsp of mixture into each liner to form the crust.
- Beat cream cheese, peanut butter, sugar, and vanilla until smooth. Add egg and mix until just combined.
- Divide filling evenly among crusts. Bake for 20-25 minutes until set.
- Cool completely, then top each cheesecake with cherry pie filling. Chill for at least 1 hour before serving.
