For the Crust:
- 4 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 1/4 cup water
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a saucepan, combine cherries, 1/2 cup sugar, water, and cornstarch. Cook over medium heat until thickened, about 5 minutes. Stir in vanilla and pour into a baking dish.
- In a bowl, mix flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
- Drop spoonfuls of the batter over the cherry mixture.
- Bake for 30 minutes or until the topping is golden brown and the filling is bubbly.
