Orange Spice Protein Rice Bowl 🍊🍚 – Creamy, Warm & Sweet!

A delightful and nutritious bowl featuring fluffy rice topped with spiced orange-infused protein, offering a creamy texture and sweet warmth that’s perfect for a comforting meal.

Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 1 orange, juiced and zested
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 200g tofu or chicken breast, cubed
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 cup spinach
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine rice and water. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes until rice is tender.
  3. In a skillet, heat olive oil over medium heat. Add cubed tofu or chicken, and season with salt and pepper. Cook until browned.
  4. Add orange juice, zest, cinnamon, ginger, and nutmeg to the skillet. Stir in honey and cook for 3-5 minutes until slightly thickened.
  5. Fold in spinach and cook until wilted.
  6. Serve the spiced protein mixture over the cooked rice.

Notes

For extra creaminess, you can add a dollop of Greek yogurt. Adjust sweetness with more honey if desired.
