Peach Oat Cottage Cheese Bake

This warm, comforting, and wholesome Peach Oat Cottage Cheese Bake is a vegan-friendly breakfast or dessert recipe using fresh peaches, oats, and cottage cheese.

  • 1 cup (85g) old-fashioned whole oats
  • 1/2 cup (60g) whole wheat flour or all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup (240g) cottage cheese
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60ml) pure maple syrup
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 2 cups (280g) peeled and chopped fresh peaches (about 3 medium peaches)
  • Topping: extra sliced peaches, rolled oats, and a drizzle of maple syrup

Instructions

  1. Preheat oven to 350°F (177°C). Lightly grease a 9-inch square baking pan or similar size casserole dish. Set aside.
  2. In a large bowl, whisk the oats, flour, baking powder, cinnamon, and salt together until combined.
  3. In a separate medium bowl or liquid measuring cup, whisk the cottage cheese, milk, maple syrup, egg, and vanilla extract together until mostly smooth. Some cottage cheese lumps are fine. Pour the wet ingredients into the dry ingredients and whisk until combined.
  4. Fold in the chopped peaches. Spoon the batter into the prepared baking dish.
  5. Bake for 25-35 minutes, or until the top is golden and the bake is mostly set. Cover loosely with foil if the top is browning too quickly. Remove from the oven and allow to cool for 10-15 minutes before serving.
  6. Top with extra fresh sliced peaches, a sprinkle of rolled oats, and a drizzle of maple syrup, if desired. Serve warm or at room temperature.

Notes

Store leftovers covered tightly in the refrigerator for up to 4-5 days. Reheat in the microwave for 20-30 seconds or in the oven at 300°F for 10-15 minutes.
