  • 2 ripe pears, peeled and diced
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon butter, for cooking
  • Maple syrup, for serving (optional)

Instructions

  1. In a large bowl, mash the cottage cheese with a fork until smooth.
  2. Fold in the diced pears and set aside.
  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. In another bowl, beat the eggs with the milk.
  5. Combine the wet ingredients with the cottage cheese mixture.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Heat a non-stick skillet over medium heat and melt butter.
  8. Scoop 1/4 cup portions of batter onto the skillet and cook for 2-3 minutes per side until golden.
  9. Serve warm with maple syrup if desired.

Notes

For fluffier pancakes, don’t overmix the batter. Use full-fat cottage cheese for best results. These pancakes reheat well in the microwave.
