Potato Skillet – Easy One-Pan Cheesy Dinner Recipe

A hearty one-pan potato skillet with ground beef, potatoes, cheddar cheese, and vegetables. Comfort food ready in just 40 minutes, perfect for busy nights or family dinners.

  • 1lb ground beef
  • 4medium potatoes, peeled and diced
  • 1red bell pepper, diced
  • 1small onion, chopped
  • 2cloves garlic, minced
  • 1 ½ cupsshredded cheddar cheese
  • 2 tablespoonsolive oil
  • 1 teaspoonsmoked paprika
  • ½ teaspoonblack pepper
  • 1 teaspoonsalt (or to taste)
  • ½ teaspoondried oregano
  • 2 tablespoonsfresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned and crumbled, about 5–6 minutes. Drain excess fat if needed.
  2. Add chopped onion and minced garlic to the skillet. Cook for about 2 minutes until fragrant.
  3. Stir in diced potatoes along with smoked paprika, oregano, salt, and black pepper. Mix well, cover, and cook for 12–15 minutes, stirring occasionally, until potatoes are fork-tender.
  4. Add diced red bell pepper and cook for another 3–4 minutes until softened.
  5. Sprinkle shredded cheddar cheese evenly over the mixture. Cover and let the cheese melt for 2–3 minutes until gooey.
  6. Garnish with fresh parsley and serve hot straight from the skillet.

Notes

Use Yukon Gold or Russet potatoes for best texture.
Microwave potatoes for a few minutes before cooking to reduce skillet time.
Swap proteins with ground turkey, chicken, or plant-based meat.
Try different cheeses like mozzarella, pepper jack, or Monterey Jack for variety.
